SpamAssassin ‘scans’ the header and the content of each and every message, calculates a spam score and then continues according to the level that you have selected. Each email account can have a different level and you can choose if the messages that the anti-spam filter marks as spam should be erased or re-sent to a different email address where you can check them later, so as to avoid deleting a legitimate message. Changing the level or disabling the protection is also pretty easy.
